What is the programme structure?

The course focuses on developing your practical skills in a kitchen and restaurant environment. The course will involve some evening work at the college’s specialty signature nights. You will learn all the skills necessary to prepare and cook and finish a wide range of food dishes. Gaining experience in boiling, poaching and steaming, preparing to cook and finish foods by stewing and braising, roasting and grilling, deep and shallow frying, regeneration of prepared food and cold foods preparation and finish. As well as developing your skills in our practical cookery classes you will gain valuable skills to help you in the hospitality and catering industry. Learners have the choice of a variety of optional units that run alongside the mandatory units of: Maintaining a safe, hygienic and secure working environment, giving customers a positive impression of self and your organisation (ICS) and working effectively as part of a hospitality team.

What qualifications do I need?

4 GCSE’s at grade D or above, or BTEC Introductory Certificate or Diploma, or Appropriate NVQ Level 1 or another relevant Level 1 foundation qualification.

What does it include?

This course includes a Study Programme to provide learners with a coherent and enriching curriculum which will provide them with the academic, social and employability skills to progress to further or higher education or employment. The content of the study programme is designed to broaden the learner experience beyond the main qualification of study. The key theme of Study Programmes at Level 2 will be the development of occupational skills in a selected vocational area and the development of personal, social and employability skills with a view to raising aspirations. As well as your core qualification you will study GCSE or Functional Skills English or Maths plus English and Maths development as part of the core qualification. Learners will also undertake planning for personal progress and pastoral education. Plus additional personal development activities which may include work experience and projects.

The College has a special industry standard Restaurant and Kitchens.

Will there be any extra costs involved?

Students will be expected to purchase equipment and uniform prior to starting the course.

How is the programme assessed?
To achieve the Level 2 NVQ in Hospitality Services you must pass all your mandatory and optional units. Each unit will be assessed by one or more of the following: Observation, Work product – photographs, videos, projects and assignments, questioning, candidate peer reports, witness testimonies, expert witness, professional discussion, simulation – is allowed only where stated in the unit.

What can I do next?

Students may seek junior level employment in a wide range of establishments within the catering and hospitality industry, such as; hotel receptionist, chef, bar tender and waiter/waitress or progress on to the Level 3 Diploma Professional Chef.
